In the Speciality Porridge category, a contestant named Rob from Sydney developed his recipe only weeks before competing at the Australian national porridge championships, known as the Pearly Spurtle. Inspired by his diverse family background—with a Scottish father and a Sicilian mother—he created a porridge cannoli, blending culinary traditions in a unique way.

Rob explained to BBC Scotland News that the cream filling combines the traditional ingredients of ricotta, mascarpone, and sugar, with porridge added and then sieved. Toasted ground oats were also mixed in, forming the texture for the filling.
