Michelin-star restaurant Ynyshir gets five star hygiene rating back

Food critic Giles Coren has previously voiced his support for the restaurant, arguing that Michelin-starred establishments should not be strictly bound by conventional health and safety regulations, suggesting instead that these guidelines “should probably be modernised.” Coren emphasized the distinctive nature of the cooking, stating, “It is not little kitchens and pots boiling away, mimsy little things being placed on plates. He is cooking with fire… he stands there in his leather apron and it’s roaring like fireworks.”

The chef behind the restaurant, Ward, who recently revealed plans to introduce fine dining at Aberystwyth Town Football Club, described his establishment as operating “at the highest standard in the world.” He highlighted the innovative approach taken toward raw ingredients and cooking techniques, asserting that his team was doing “something different.” However, Ward acknowledged ongoing difficulties with Ceredigion council’s environmental health department, attributing the issues to “persistent challenges” mainly concerning documentation and a perceived lack of understanding regarding specialized procedures used in the kitchen.

According to a Freedom of Information request obtained by BBC News, the restaurant’s one-star hygiene rating was determined based on several issues identified during inspections. These included a dirty floor, insufficient hand-washing facilities in some areas, broken equipment, and the presence of “an accumulation of dead flies.” These findings raised concerns about the establishment’s compliance with standard food hygiene requirements.

Despite these problems, Ceredigion council maintained that inspections were carried out in accordance with the national standards established by the Food Standards Agency. The council also pointed out that between April and December 2025, 90% of premises inspected within Ceredigion had received food hygiene ratings ranging from three to five out of five, indicating that the majority of businesses in the area met acceptable hygiene standards
